Look at tortellini Bolognese: a hundred years from now, they could be made in a completely different way. There are theories that say that Italian cuisine is actually the cuisine of emigrants to America who then came back: we think the world is here, and instead the world is everywhere.”

“I like to share. Often in the food industry - perhaps also because of a capitalist attitude - there is a certain jealousy about one's discoveries, but I don't see it that way. I am lucky to have a stable job, so I can afford to experiment without the anxiety of having to sell what I produce. Today, there is nothing secret, you go on the Internet and you find everything, so sharing and dialogue help grow the industry and the people in it.”

"Obsessions never arise directly from the drawing board. And anyway I don't know if I want to pursue them to the end, I prefer to stay in my own dimension, not thinking too much about the consequences. I like to explore, discover new places, but then I don't necessarily want to live there."
